We work hard to ensure our food products stay fresh for longer, without compromising taste. One example where we have been able to achieve this is with one of Japan’s favourite comfort foods: Katsudon (a bowl of rice, topped with pork and egg). Seven-Eleven Japan introduced an industry-academia collaboration using MALDI-TOF MS technology to identify microorganisms that can affect product quality. Thanks to that initiative, we have been able to enable more precise and consistent hygiene management across food production lines. What does that mean for our customers? - The freshness of Seven-Eleven Japan’s katsudon was extended by one day without compromising taste- The initiative supported efforts to reduce food loss by helping other products stay fresh for longer- Improved visibility across production lines enables more targeted hygiene management- Longer freshness can support more efficient production planning and supply chain productivity The greatest advantage of utilizing MALDI is that it preserves the taste of freshly made food for longer, allowing us to deliver delicious products to even more customers. It is one example of how Seven-Eleven Japan continues to combine food science, operational excellence and partner collaboration to deliver better everyday convenience for customers.
